The Chef & Story

Located at 11 JALAN KLAPA,as most people may know it, has a nice, cosy
French feel and ambience and yet reasonable room rates for a day stay,
located in just 5 to 10 minutes’ walk from BUGIS MRT Station or LAVENDER MRT Station.

Little was known about the restaurant, PERANAKAN FLAVOURS@ THE ARDIENNES HOTEL,
which by helm by a veteran Chef, Ben Teo or the renown “UncleBen”,
well-known and highly recognised by the Peranakan community for his authentic
and yet adventurous peranaken cuisine.
Being a true-blue Teochew Perarankan BaBa, Uncle Ben hopes to brings
peranakan food to a higher level, just like fine dining but also preserving the
traditional and familiar way of how the Peranakans should eat.

Chef Ben Teo possesses an impressive career both in Chinese and Asian culinary,
spending more than 30 years in this industry, he have nothing but the best
that he could offer to those who deserved and required of him.
He started out when he was 14 years old as a young boy hawking
wrapped chickens and Nasi Lemak in Bus Interchanges where
his passion and desire grown fond to seek more than just basic hawking.

Chef Ben Teo meet his mentor, the renowned Head Chef Chin Hon Yin of Li Bai at The Sheraton Towers in 1985.Chef Ben Teo arduously work hard toward his undaunting desire in pursue of knowledge in cooking where he rose through the ranks to the position of a Head Chef in The Sheraton Bahrain,Mei hwa restaurant in 1992 till 1995.He was highly recommended by Chef Chin Hon Yin to take up the position.

In 1995, The Novotel Bangna in Bangkok requested for his service as
Chinese Executive Chef of the Shui Xin till 1998, however the calling from
The Sheraton Group brought him to The Sheraton Kuwait as
Master Chef of The Sheraton Dragon Court Restaurant, the only
seven stars hotel of that time from 1998 till 2001. He have been featured
in many TV programs, newspapers, famous blogs and food related websites.

Chef Ben Teo was approached by The Ardennes Hotel Singapore to do a rebranding of
their existing cafe into a exquisite 20 seater Peranankan restaurant,

THE ARDENNE HOTEL .Chef Ben Teo personally selected his own team of existing
Chef and Cooks hoping that he could pass down his unique dishes and
cooking technique for the future generation to comes. Uncle Ben feels food to be....
”forever changing to fit the customers' taste but basic is still the same ,as well as
the heart and soul of the Chef and Cooks who cooks it..You can feel it through
the flavours..” hence we have decided on using PERANAKAN FLAVOURS
@ THE ARDIENNES HOTEL.

The Ardennes Hotel


The Ardennes Hotel is a reconstructed 2-storey conservation shophouse
with attic roof mezzanine designed as a boutique hotel which offers
15 designer rooms which opened on the 17th September 2011.

Each guest-room is equipped with a flat-screen TV with movable arm brackets,
DVD/CD player, Radio with iPod charger, work desk, state-of-the-art LED desk lamp
with power supply for your mobile phones,notebooks and iPod, iPhone or iPad, telephone,
air-conditioning, internet access ( wireless ) in the lobby and all the rooms,
safe deposit box, hair-dryer, mini-bar, coffee/tea maker,
private bathroom or long bath, bathrobes, etc.

The hotel is equipped with a 400kg capacity passenger lift with glass door.
There are also facilities which cater for the safety of handicapped/disabled guests.
Room sizes vary from the smallest 16m2 for a ' Superior Twin '
room to 27m2 for an Executive Suite.

Facilities & services provided include an outdoor pool/Jacuzzi,
Burgundy Cafe & Wine Bar ( with a capacity of 28pax ) serving Italian cuisine,
bar counter offering drinks that include house pour and premium wine, whisky,
cognac and spirits, concierge. tour desk, room service and 24-hour front desk.

Wifi and mini-bar are provided free. Laundry/Dry Cleaning service,
fax/photocopying is available
